This recipe was inspired by Master's Weekends earlier this month, however, this is PERFECT for the upcoming Memorial Day Weekend! Super healthy, super yummy!

Recipe for the cookie:

  • 1 cup softened vegan butter
  • 3/4 cup cane sugar
  • 1/2 cup milk
  • 1.5 cup flour
  • 1 tsp salt
  • 1/4 tsp baking soda
  • 1/2 tsp baking powder

Instructions for the cookie:

  1. Preheat over to 350 and line baking sheet with parchement.
  2. Cream vegan butter and can sugar together.
  3. Add milk and squeeze of lemon to butter and sugar mix.
  4. Add dry ingredients together.
  5. Add dry ingredients to mixture and mix.
  6. Roll into 1 inch balls
  7. Bake at 350 for 13-14 min

Ice Cream:

  • 3 cups frozen peaches
  • 1 tsp vanilla
  • 1/2 cup oat milk
  • 1 tsp Guar gum
  • 1 tsp avocado oil

Ice Cream Directions:

  • Blend and let freeze in freezer!
