This week I'm trying out an office lunch meal prep routine! Eating healthy is so important but can sometimes be tricky to do when you're sitting at your desk all day. I've decided that instead of eating out for lunch this week, I would tap into my meal prepping skills to make some delicious salads!

My Office Salad Routine:

  • Quinoa for carbs and protein as the base
  • Yellow peppers
  • Red peppers
  • Broccoli
  • Cucumbers
  • Zucchini
  • Green onion
  • Carrots
  • Spinach
  • Soft boiled eggs
  • Pumpkin seeds
  • Feta
  • Homemade shallot dressing: red wine vinegar, olive oil, shallot, mustard, salt, pepper
