The weekend is coming up and one of my favorite things to do when I have some downtime is to bake or make an extra fancy meal! This week I want to share my gluten-free chocolate cupcake recipe. It's super easy and a perfect treat- your friends will think you should be on the Great British Bake Off after making these (anyone else a fan?!) 😍

Dry Ingredients:Β 

  • 2 cups of cassava flour
  • 1 cup pure cocoa powder
  • 1 1/2 cups granulated sugar
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp vanilla essence

Wet Ingredients:

  • 1 cup milk
  • 1 cup water
  • 2 eggs
  • 1/2 olive oil or oil of choice

Method:

  1. Mix all the dry ingredients in one bowl
  2. Mix all the wet ingredients into another bowl
  3. Pour the wet ingredients into the dry and whisk until the batter is smooth and well combined
  4. Pour the batter into a well-greased and lined cupcake tray and bake at 350 degrees F for 40 minutes. When you stick a skewer in, it should come out dry!
